Menu Monday

Our grill is officially up and running, so this week's menu is full of grilled goodness. Yey!

Monday: Shredded Turkey & Squash over White Rice. We had a turkey breast for Easter dinner, and had a lot leftover. Last night I hand-shredded the turkey and threw it in a tupperware container. I cut up 4 little zucchinis (well, one was a yellow squash) and a red onion and tossed that into the turkey container, and covered the entire container in Lemon & Garlic marinade and a little bit of pepper. I let it marinate overnight, and this evening I'll throw it in a disposible pan and put it on the grill till everything is nice and toasty. Served over white rice.

Tuesday: Homemade Ranch Burgers & Baked Potatoes. 93% lean beef was on sale, so I picked up a pound of that and a packet of ranch dressing mix. I'll mix in the ranch with the beef, and throw in some diced onion. YUM. And on the side, a sweet potato for me and a white potato for Ryan.

Wednesday: I'm at work late and Ryan is on his own.

Thursday: Fish. I hate buying fish before hand, so I'll stop at the store on the way home and see what looks good. Maybe served with cous-cous?

Friday: Ryan keeps mentioning making wings on the grill, so we'll probably do that. Maybe with a nice potato salad? Or pasta salad? My sister is coming in, so we won't eat till late anyway... I'll probably pick up the stuff I need for this meal when I go shopping on Thursday.

So this week involved two shopping trips, even though I've been making it a rule to only go once a week. We went on Sunday and shopped for Monday-Wednesday dinners, plus breakfast and lunch for the week.... and it was $45! When I go on Thursday, I only need dinner for two nights, and then I'll go out again on Saturday when my sister is here. It's supposed to be beautiful this weekend, so maybe we'll do kabobs on the grill? Either way, I have $40 left in this week's grocery budget to cover dinner for Thursday-Saturday. Totally do-able... and if I try, I bet I can come in under budget, even with fish or meat on all three nights!

Menu Monday

It's super late on Monday night but I haven't posted a MM in a while so I figured why not :-)

Monday: Ryan was at work late tonight, so he took a sandwich and I had my most favorite meal ever - half a pound of thin spaghetti covered with lemon pepper. I could eat pasta or white rice covered in lemon pepper every day of my life. It's delicious.

Tuesday: Rice & Pigeon Peas, with Cucumber & Tomato Salad on the side. In case you aren't familar with the salad (and if not you NEED to be), it's just 2 cucumbers, 1 tomato, 1 red onion - chop everything and throw it in a bowl. Add a little bit (really, just a little) of olive oil and a ton of vinegar (whatever you have - we like a mix of apple cider and red). Let it soak for at leat 20 minutes, but really over night is best.

Wednesday: Shepherds Pie

Thursday: My mom is in town and we're going out for dinner to celebrate Ryan's new job.

Friday: Hopefully something on the grill. Maybe roasted red peppers and fresh mozzerella drizzled (smothered) in balsamic vinegar on a portugese roll? Maybe with some grilled chicken? Mom's still in town, so it depends on what we do during the day.

Saturday & Sunday: Easter chocolate. All day.

Menu Monday

Happy March 1! I was going to say I can't believe it's Monday already, but holy crap, I can't believe it's March already! I'm really done with this cold weather, so maybe spring could just hurry up and get here.

Anywhoo... here's what's for dinner this week:

Monday: my friend/business partner and I are having a working dinner at my house. I think I might make some pizza - it's quick and a crowd-pleaser. Served with a salad?

Tuesday: Grilled cheese and soup. I still have a few cans from the Progresso giveaway!

Wednesday: I am at work late, so I'm going to bring a Boca patty and probably some frozen veggies. Ryan's on his own.

Thursday: Last regular-season week of volleyball officiating. I'll bring a Boca patty and some frozen veggies. Ryan, again, is on his own. Poor guy.

Friday: Debatable. We may be in NJ for a surprise party, or we may not be. We're still deciding if we want to make the drive up there.

Sat-Sun: May be in NJ or here. Who knows. We'll play it by ear.

So that's our week. Pretty boring, huh? I think we're both home 4 of 5 weekdays next week, so I'll have some of Gina's WW Recipes to try out for you then!

Lame Menu Monday

The 35+ inches of snow we got dumped on us last week really screwed with Ryan's work schedule, so they had to push back a huge event to this week. As such, he's working late Tuesday through Saturday. That basically translates into lots of Boca chick'n patties for me this week, because let's face it - why waste a perfectly good home cooked meal on just myself?


So here's my super lame menu for this week:

Monday - A variety of fake fried items. I keep coming across these cauliflower fritters and these zucchini sticks and I've been dying to make them. Tonight seems like a good night because weigh in on Wednesday is going to be scary...

Tuesday - I'm home alone, and have weigh in tomorrow. BIG salad with lots of veggies in a last ditch effort to get rid of water weight.

Wednesday - Home alone again... probably soup and a Boca patty.

Thursday - Same as Wednesday. Awesome. At least we won't have a huge grocery bill this week!

Friday - Neither of us are home for dinner and we're both being fed for working special events at our jobs. Free food = awesome.

Saturday & Sunday - I think Ryan is working on Saturday, so I'll probably just do more grocery shopping then...

Menu Monday

No work today, and we're expecting another foot of snow to be dumped on us between Tuesday and Wednesday. What do you do when you're snowed in? Eat. Well, I do, anyway.

The scale has been no bueno the past few days - probably a result of my baking/carb addiction. I'm going to attempt a healthy menu this week in hopes of getting the scale to inch downwards back where it should be for the next WW weigh in (Wed, snow pending).

Monday: Ryan requested chili, so I'm going to try out this recipe. Big seving for not a lot of points. That is totally how I roll.

Tuesday: We may be snowed in again, but if not, I have weigh in the next morning. I'm going to make quick and easy stuffed peppers and serve with a side of salad.

Wednesday: Leftovers. There'll be chili, stuffed peppers, and french onion soup to choose from, so no one is going hungry.

Thursday: I'm officiating volleyball. Leftovers (or rice with buffalo sauce, which is Ryan's go to meal) for Ryan, and a salad and Boca chik'n patty for me.

Friday & Saturday: Up in the air. Ryan may be at work late, or maybe he won't be. Same goes for the weekend... the snow messed up his work schedule and he might be working all weekend.

Valentines Day: I'm at work from 5pm-midnight. We may go out for lunch, or maybe we'll order in to my office and spend the evening there. No clue. How romantic (kill me, please).

I'm hoping to keep this grocery bill under $75... we also need some odds and ends (like disher washer packets and kitchen cleaner), though, so wish me luck! Oh, and don't forget to enter the WW giveaway I have going. It ends tonight at midnight, so enter now!

Menu Monday: a day early

It's a busy one, folks, so here we go:

Monday: School is back in session, and I'm staying late to teach the kiddies CPR & first aid. As such, I'll be bringing a Boca chicken patty and some yogurt. I believe Ryan is also at work late for a meeting, so he's taking a sandwich.

Tuesday: Salad with craisins, blue cheese crumbles, and balsamic dressing. Served with tomato basil soup.

Wednesday: I'm at Job #2, and Ryan's on his own. Pasta, maybe?

Thursday: Date night. It's Baltimore's Restaurant Week and we've got reservations at Pazo. After that, we're heading over to the Baltimore Comedy Factory - someone at work won a free office party, so we've got free tickets. Yey for cheap dates!

Friday: Woooo hoooo, we're home together at the same time! I'm making homemade burrito bowls with this shredded chicken and this cilantro rice. Yum. This will be accomplanied by a HUGE glass of wine. My new favorite is Robertson Winery Gewurztraminer. It's a sweet, fruity white that I bought after a tasting at our local liquor store. Delicious.

Saturday: I'm working till noon at Job #2, and then home. Maybe we'll go shopping that afternoon for something....

Sunday: The downside to the kiddies being back in school means I'm at my real job on the weekends a lot more. Work from 5pm till maybe 9 or 10pm..... Ryan's on his own again, and I'm taking a damn Boca chicken patty and salad.

Menu Monday

You know the drill.

Monday: No work for us today! Ryan requested Adobe Chicken Breast with Yellow Rice and Sweet Potato Fries, so that's what we're having. I may skip the rice though, since I can't stick to just one serving... unless a serving is approximately a pound. Sadly, WW seems to think a serving is 1/4 cup, which is barely even a taste of rice.

Tuesday: We're both home for dinner again! I have a whole frozen chicken from last week when it was buy one, get one free, so I'm going to try out this Peruvian Roasted Chicken with Aji Verde. I'll put everything together on Monday night so it can marinate and then throw it in the oven when I get home from work on Tuesday. Will serve with salad.

Wednesday: I'm at real work late tonight, so I'm taking leftover Taco Chicken from this weekend (I froze the leftovers in individual servings) and Ryan's having leftover Peruvian Chicken from last night.

Thursday: I'm officiating volleyball tonight, which leaves Ryan home alone again. Sadness. Taco chicken again for me, and pasta for him.

Friday: Off to Job #2. I am a terrible wife. It's my last night with Taco Chicken, and it's a Boca chicken and salad for Ryan.

Saturday: Both home for dinner for the first time in 4 nights, so I'm making Spaghetti with Mushrooms and Garlic and serving it with a huge glass of wine. And maybe some salad.

Sunday: I don't have my Job #2 work schedule yet, so I may be working. Who knows... I'll figure this out mid-week.

Menu Monday

Another Monday.... and my second weekly menu! My sister is coming down on Friday for the weekend and she's bringing some nice Jersey pizza dough for homemade pizzas, so I'm only worry about doing grocery shopping for Monday-Thursday for right now. Sadly enough, I'm only home for dinner on one of those days, so it should be cheap and easy.

Monday: I'm at Job #2 and Ryan is working late, too. Boca chicken patty, yogurt, and crackers & salsa for me, sandwich for him.

Tuesday: Turkey Meatloaf Muffins and butternut squash fries (done the same as sweet potato fries)... both are WW recipes which I'll review on Wednesday!

Wednesday: Going to Job #2 again. Leftovers for me, rice and meatloaf for him.

Thursday: Another late night. I'm taking a Boca chiken patty and Progresso tomato soup. Ryan is making pasta.

I'll do grocery shopping on Friday morning for the weekend since my sister is coming down and I haven't figured out what we're doing just yet (besides making pizza and ice cream).

Menu Monday

Here we are, the first Menu Monday of 2010! This, of course, is one of my goals (see #4) for the new year, and what better way to keep myself acountable than to post it here. In general, I'm going to just post dinners, since who really wants to know what I'm eating the rest of the day (cereal and salads, if you do care)? And if you do a Menu Monday, I'd love for you to leave the link in a comment below - I'm always on the look out for new recipes!

Monday: Whatever looks good at the grocery store! We didn't leave the house yesterday (since it was FREEZING) and planned to go tonight after work. What a way to start the week, I know.

Tuesday: Low-and-Slow Sloppy Joes (from the WW Momentum Cookbook) and salad

Wednesday: I'm at Job #2 and Ryan is at home. I'm taking left over sloppy joes, and he's having salad.

Thursday: Again at Job #2. I'm taking a Boca Chik'n Patty, Peas for One, and crackers/salsa, he's having left over sloppy joes and salad.

Friday: Stupid Job #2. Boca Chik'n Patty, peas for one, and crackers/salsa for me. Boca chik'n patty and salad for him.

Satruday: Late dinner, because Ryan is at work all day. I'm going to attempt to roast a whole chicken (I'm a pro at turkey, but have never done a chicken!). Served with salad.

Sunday: Ryan's at work again all day and won't be home in time for dinner. So, left over chicken and salad for me, and he'll take some leftover chicken with him.

Boring week, huh? Oh well. Just means less to buy! I'll do next week's shopping on Sunday and have a new menu for you next Monday! Anyone else menu planning? Leave me a link below!
