Quinoa for Dummies

My bff loves quinoa and when we trade our weekly menus, I always feel like I should be making quinoa. According to her (and other people in the know), it's super healthy and has a ton of protein.... why wouldn't I make it?

Because I was scared.

There's rinsing involved, it's $6.99 a bag.... I don't know how to cook it. But it's healthy. And meatless (meat is expensive). So I tried this recipe on Wednesday night. I subbed out one can of beans for a can of Rotel.

The quinoa has a sweet, but nutty, flavor and has the texture of firm cous-cous. I handed my husband his dinner and three bites in, he says "Huh... this is really good". Victory, again.

I'm going to add this in to my weekly rotation.... now I just need some new recipes - what else can you put with quinoa?

I have a recipe using it somewhere...I'll look for it for you. One of my best friends is a vegetarian. She gave me my first box along with the recipe years ago...I was afraid of it too, but it is quite good.

Check Costco for Quinoa. The one in Bridgewater sells 2 pound bags for $9.99. Total steal!

I've been debating trying quinoa for awhile, it's said to be excellent for those trying to conceive and those who are pregnant so I figured, what better time then now, right? Hope you'll post some recipes if you find some good ones!

It's really great if you make Tabouleh salad. Just dice tomato, cucumber and red onion, finely chop some fresh parsley, cilantro or mint (even better with all three) dress with lemon juice, olive oil, salt and pepper then mix in some cold cooked quinoa. Refreshing, tasty, tangy and healthy.
