Want a happy husband?

Tell him you're making Chipotle tonight. Be prepared for much skepticism and ridicule. Do not be deterred.

I made rice and shredded chicken last night. I made a nice bed of rice, layered the chicken and veggies over top, and dressed it with a little fat free sour cream and some Kraft Free cheddar.

And then a gave it to my highly skeptical, Chipotle-loving husband. Rave reviews spewed forth. It was a very good night at our nest.

The best part, of course, was that both recipes had WW points attached to them... the bad part was that I had a total disregard for the portion size when I tasted the rice. At least I know how many points I ate, right?

Trust me on this one.

I feel quite certain that Paul would not like homemade Chipotle as much as *actual* Chipotle :) He is so dang picky...ugh.

It IS a nice thought, though...

My husband would be skeptical as well. Congrats on a Chipotle copy that's awesome that it worked for you.

I make homemade Chipotle ALL.THE.TIME. because we don't have a chipotle down here! The secret I found is in getting the right burrito shell so it stretches enough to get all the rice and beans and meat and cheese and sour cream inside! Haha. I'm a homemade Chipotle expert! ;)
