Slow Cooker Goodness

On Monday I threw this out there for the world to see. So far, so good! We're sticking to our menu, which means we're sticking to our budget. 9 days in and we're still doing good.

I want to say that the Sloppy Joes lasted as many "leftover" days as I had budgeted for, but um... not so much. It was done that night. 6 servings between 2 people. This is a problem folks. On the up side, we skipped the bread and just put it in a bowl (yes, it's that good). On the down side... 6 servings between 2 people.

At least it was a Weight Watchers recipe, right?

So, for your viewing/culinary pleasure, here's the recipe from the WW Momentum Cookbook (paraphrased by me):

Low-and-Slow Slopp Joes
Need:
1 lb. lean ground beef (7% fat or less)
1 (14.5 oz) can of diced tomatoes
1 small onion, chopped
1 celery stalk, chopped (I left it our; we don't like celery)
3 TBSP dark brown sugar
2 TSP Worcestershire sauce
1.5 TSP cumin
1 TSP chili powder (I was liberal)
1/2 TSP salt
6 whole wheat sandwich rolls

To Do:
  1. Brown the meat in a non-stick pan with some Pam over medium heat. Be sure to break it all up nicely.
  2. Transfer meat to slow cooker. Add remaining ingredients, except for rolls (duh). Cover and cook on high for 3-4 hours or on low for 6-8 hours.
  3. 1/2 cup of sloppy joe per roll. Or just put it in a bowl with maybe some shredder cheddar cheese. Holy crap, it's good.

If you eat a 1/2 cup of sloppy joe on a roll, it's 4 points per serving. If you eat 3 servings with no roll.... I estimated 8 points. But who knows. I guess I could put the ingredients into the WW recipe builder, but I'm too lazy. Sorry.

I know a lot of folks don't like to make crock pot stuff that needs browning or additional steps before hand. Here's the thing - just do it the night before, and put it in the fridge. Then assemble it in the morning and turn it on. The browning takes 5 minutes. Just do it.
