Bliss

I got the KitchenAid Ice Cream Attachment the other day and I can't even explain to you my deep, undying love for it.

The best part about homemade ice cream (besides the fact that I know exactly what's in it) is the ability to invent flavors (and not wait for Ben and/or Jerry to come up with it first). My new favorite, plus the recipe should you want to replicate this deliciousness:

Vanilla-Mint Chocolate Chip Ice Cream
1 cup of Splenda Sugar Blend for Baking
1.5 cups of fat-free half and half
1 cup of light cream
3/4 cup + 2 TBSP Eggbeaters
1 TBSP Vanilla Extract
1 TBSP Mint Extract
3/4 cup of shaved chocolate chips (put the chips in a food processor)

Directions:
Mix all ingredients (except chips) in a bowl. Add to the ice cream attachment, following all manufactuers directions. Mix for 28 minutes. Add chips in last two minutes, and continue mixing until blended (about 2 min). Pour ice cream into freezer safe container and put in freezer for atleast 4 hours (over night is better). Enjoy.

Makes 2 quarts, which is about 16 half cup servings. Each serving is only 3 WW points :-)

EDIT: Holy crap, if you have an ice cream attachment and you like pumpkin, you need to get on this pumpkin ice cream. It's unreal. And if you use heavy cream, but sub out regular sugar for Splenda Sugar Mix, then it's also only 3 WW points per half cup serving. You're welcome.

I've wondered if that ice cream attachment is worth it... glad to know that you love it so deeply :). That recipe is making me drool though!

@Kasey - it's totally worth it if you use a BB&B 20% off coupon! Actually, it's worth it if you get it at full price too, but it's more awesome if you get it on sale. I've used it 3x in the past 2 weeks. I'm working on pumpkin ice cream right now :-) My favorite part is I can make it as full-fat or no-fat as I want, and I know there's no chemicals in it.
