Freezer

I'm going to try to make/freeze as many meals as possible, strictly so I don't have to think too much about dinner and a baby little enough to have her age counted in weeks. Clearly I'd rather just think about the baby.

This week I made a huge pot of sauce and 3 batches of meatballs. We had meatballs and pasta on Tuesday night and I was able to freeze 2 dinners worth for post-delivery. Other than that, I haven't really done much freezer cooking.

I'm thinking about making these enchiladas and a batch or two of baked ziti. I came across this recipe collection and might try out a chili or noodle recipe or two. Oh, and these chicken pot pies... they look like a lot of work but I love a good chicken pot pie.

Anyone have a favorite go-to recipe that freezes nicely? Please share!

EDIT: Today I made a big batch of shredded chicken breasts and portioned it out to 3 bags of just over 1 cup of shredded chicken each. I can use shredded chicken in pretty much anything, so there's another 3 dinners! The shredded chicken is really easy to make - toss chicken breasts into a large pot, add a quartered onion and some garlic cloves, cover with water (I do about 2 inches), and simmer over medium heat for 30-40 minutes. Once the chicken is cooked through, let it cool just enough to be able to hand shred it. I had a pack of 4 thick breasts that made three 10 oz portions to freeze. I can use the chicken over chili, rice, or even season it and just throw it over pasta. Yum.

Since my husband and I are both accountants, our busiest times of the year, work-wise coincide with one anothers and it's worse than ships passing in the night. To combat the dreaded accountant 30 that many in the profession get from long 14 hours days 7 days a week sitting on their butt and eating take out on the clients dime, I started taking a weekend to prepare 4 months of individually packaged meals for the freezer. Here is some of what we did:

Pasta Casserole
Chicken Broccoli Stuffed Shells
Garlic Lime Chicken
Garlic chicken bites
Spanish Rice
Stuffed Cabbage
Chicken Pot pie
Quesadillas
Pasta fagiole soup

Sauce and Meatballs

If you freeeze in individual sized containers, it unfreezes so much faster and since we were packing breakfast, lunch and dinner, the dishes just served as the "ice pack" to keep everything else cool. Worked like a charm and we did the entire thing in one weekend! (granted, I was not extremely pregnant so I'm sure my energy levels were a bit higher ;))

thanks for this tip! I'm going to start cooking on the nights my husband has to work and then freezing the meals, so that when my husband is at home the next night, we can have dinner and don't have to worry about being hungry and who has to cook when I get home from work!
