Mexican Deliciousness

Here we are, fully on the Weight Watchers bandwagon. Thing is, we heart Mexican food soooo hard..... and most mexican food is loaded with cheesy goodness, which is no bueno for my waistline. After hours of scouring the internet, I have a winner. This taco bake passed the husband test and got 2 Thumbs Up! Lucky for me, it's only 6 points per serving and filling. King Ranch Chicken
Serves 4

Ingredients
1 bell pepper, chopped
1/2 onion, chopped
1 can Healthy Request Cream of Chicken Soup
1 can of Niblets corn
1 10oz can of Rotel tomatos (we used Original -it has some serious kick)
3/4 cup of cubed chicken
4 whole wheat tortillas, torn into big chunks
1/3 cup of shredded Mexican cheese (low fat)

Instructions
Spray a skillet with Pam. Dump in the chicken and cook it up good. In another skillet, saute the pepper and onion. Once thats cooked up, add the soup, Rotel, corn, and chicken. Stir. Heat it all up. Spray an 8x8 pan with Pam. Spoon in enough of the soup mix to cover the bottom of the pan. Then put down a layer of torn tortillas. Add more soup mix, then more tortillas. End with tortillas (you may not need all 4; I didn't), and sprinkle the shredded cheese on top. Throw it in the oven at 350 for 25 minutes, or until it's hot and bubbly.
