Dinner Success

It's not that Ryan is tough to feed. This is either due to his exceptionally adventurous palate and my great cooking ability, or his knowledge that either he can eat what I feed him or he can cook and clean up for himself. I choose to believe that the first scenario.

That being said, there are times where I'll make something and he'll let me know that while it was fine, I probably shouldn't make it again. Ever. Tonight was not one of those nights.

In my attempt to make real dinner (read: not one pot meals) that was still WW friendly and yet a step up from grilled chicken and veggies, I spent a great deal of time this weekend looking up recipes. I found a few on 3 Fat Chicks and a few on Dotties Weight Loss Zone; I highly recommend both sites if you're in a rut and need some inspiration. I found my inspiration for tonight's dinner on Dottie's site... Coke Chicken.

The recipe is insanely easy: 1 pound of chicken, a cup of ketchup, a can of Diet Coke. Dump everything in a skillet, bring to a boil, cover, and simmer until the chicken is cooked (about 20 min. if you cut up the chicken, about 45 min. if you leave the breasts whole). Then uncover, bring back to a boil and stir until the sauce is all stuck to the chicken. Done.

I paired the chicken with chopped sauteed zucchini: 2 whole zucchini all chopped up in 1 tablespoon of EVOO. Season with whatever you like; I used something Ryan bought called Salad Magic. Saute. It's delish.

The chicken serves 4, and it's 4 points per serving. The zucchini serves 2, and is 2 points per serving (because of the EVOO, which your body needs). And wouldn't you know, Ryan loved it.

Don't think he watched me pour the Coke into the pan and said "Wow, that looks great!". No sir. There was skepticism and sarcasm abound. But then I brought him a plate, and he tentatively put it in his mouth. 15 minutes later he was getting more. I kick so much ass in the kitchen. Even if I do make my chicken with Diet Coke.

ha. that sounds a little strange to me too, but glad he liked it!
I'm really hoping to get a response from Eric like that...I'm SO nervous to cook for him because we have the opposite likes and dislikes when it comes to food.
