Sunday Dinner

We normally go grocery shopping on Sundays, but it was cold and rainy this past Sunday (and I knew I could go on Monday because we were off from work) and I had no desire to leave my house. Except to get a DD latte and the Sunday paper with my sister (so we could clip coupons together).

So with no new groceries and no real plan, I looked through the cabinets and came up with a damn good dinner!

Chicken with Pasta & Veggies

Ingredients for Pasta & Veggies
  • half cup of Smart Taste Pasta elbows
  • 1 bell pepper, chopped
  • half an onion (I used red), chopped
  • 1 cup chopped fresh broccoli
  • crushed garlic (I use far more than the average person)

Directions

Cook the pasta according to box directions, drain, and set aside. Spray a skillet with non-stick spray. Add all of the chopped veggies and cook over medium heat; be sure to stir it so that nothing sticks. When veggies are cooked to desired done-ness (I like mine still slightly crunchy), add the pasta and stir over medium heat to blend. Add salt and pepper to taste.

Ingredients for Chicken

  • thin cut chicken breast
  • fresh cracked pepper
  • non-stick cooking spray

Directions for Chicken

Spray a frying pan with non-stick spray. Over medium heat, lay the cutlets side by side. Spray the chicken (which ever side is up) with non-stick spray and immediately grind pepper over the entire thing. Cover it good. And then flip both pieces. The other side will not be done, but that is good. Spray that side with non-stick spray, and again cover the entire side with ground pepper. Both sides should be pretty well coated with pepper now. Just cook till done!

Complete the Meal
Split the pasta and veggies between two plates. Cut up each chicken breast, and lay over pasta. Sprinkle with Parmesan cheese. Serves 2. WW points per serving: 7

Looks good to me. It is always amazing to me how much I love pasta when I'm counting WW points. When I'm not counting and just eating...I don't crave carbs at all, but put me on that diet and I want pasta, rice and bread.
